One of my favorite techniques is to create a chocolate lace collar to be wrapped around a cake. It's amazing to me how melted chocolate can be used to create such an artistic design. With a little bit of engineering, design and a decent amount of patience, this design pattern really adds an incredible decorative and elegant touch to a fairly basic cake.
I thought using a heart shaped double layer chocolate cake, filled with raspberry puree and frosted with Italian merengue buttercream, which is as sweet as American buttercream would be the perfect Valentine's gift.
