Apple Swirl Cake

Apple cakes are pretty much mandatory during fall. This easy Glazed Apple Swirl Cake will satisfy every apple craving this season. Made with fresh apples, cinnamon and butter, this cake is perfect for any cozy day!


Ingredients:

For the cake:

  • 12 tablespoons unsalted butter 1.5 sticks

  • 3 cups all-purpose flour

  • 1 tablespoon baking powder

  • 1/2 teaspoon salt

  • 3 tart apples

  • 2 cups plus 3 tablespoons granulated sugar divided

  • 1 teaspoon cinnamon

  • 3 eggs at room temperature

  • half of lemon or lime

  • 2 teaspoons vanilla extract

For the glaze:

  • 4 tablespoons unsalted butter 1/2 stick

  • 1 cup confectioners sugar

  • 4 tablespoons half-and-half or milk plus more if needed.


Instructions :

For the cake:

1. Preheat the oven to 325 degrees F. Grease and flour a 10- or 12-cup bundt pan.


2. Rinse, peel and core apples. Squeeze half of lemon or lime over apples to prevent from oxidizing.


3. Sprinkle apples with cinnamon then toss making certain all apples are covered.


4. In a sauté pan, melt 4 tablespoons of butter along with 3 tablespoons of sugar Once melted and combined, add apples and cook on low heat until apples are softened. About 10 - 15 minutes.


5. Melt remaining 8 tablespoons of butter


6. In a large bowl combine dry ingredients ( 3 cups all-purpose flour, 1 tablespoon baking powder, 1/2 teaspoon salt, and 2 cups granulated sugar )


7. Add 3 large eggs and mix into dry ingredients once well combined add melted butter and continue mixing.


8. Add apples to dry ingredients, eggs and butter mixture.


9. Fill prepared bundt pan and place in oven. Bake for 50 minutes to 1 hour or until a cake tester or toothpick inserted into the center of the cake comes out clean.


10. Cool cake in the pan for 15 minutes. Remove cake from pan and cool completely on a wire rack.


For the glaze:

  1. In a small skillet (stainless steel recommended), melt butter over medium heat.

  2. Continue to cook until it turns light amber in color. Watch carefully and do not burn. Pour browned butter through a fine mesh sieve into a small bowl. Set aside to cool to room temperature.

  3. Add the confectioners sugar to the bowl with the browned butter. Add the half-and-half 1 tablespoon at a time, stirring to combine until smooth. Add more half-and-half if needed to get to desired consistency for drizzling on cake.

  4. Drizzle glaze over cooled cake.
